Starting off this week of new holiday cookie recipes with one of the prettiest of them all! I love this recipe so much for soo many reasons! It’s such a classic cookie, with its tender crumb and super buttery flavor, coated with crunchy and sparkly sugar on the edges to add to the wow factor while also giving the palate new textures in every bite!

Perhaps my favorite thing about these raspberry shortbread cookies (besides the way they look, I mean DUH) is how surprisingly EASY they are to put together! The dough comes together super quickly and simply, with only a handful of ingredients. And that pretty marble pattern is so easy, a 6 year old could do it!
