I hope you haven’t missed me in your inbox too much. I’ve been taking a little break to slow down from the crazy amounts of Holiday baking I was doing. It was so fun to deliver my annual Christmas cookie boxes again. This time, I delivered a record breaking amount! It’s always so great to catch up with people over a small gift of cookies right before everyone gets super busy with the holiday gatherings!
I’ve been deep in the rabbit hole of home barista stuff lately. And after getting a new camera, I’ve been loving to film some beautiful coffee things and drink recipes like this Roasted Strawberry Matcha Latte!
Iced Matcha Latte with Roasted Strawberry Sauce
This drink has gained so much popularity lately on socials, but it’s definitely not a new drink. The first time I came across this combo was probably over 10 years ago at Boba Guys bubble tea shop and I LOVED IT.
I already always loved matcha lattes, but add in a bit of vanilla syrup and the sweet, refreshing, tart yet sweet flavors of strawberries, and it’s an even more wonderful treat!
For this easy recipe, I decided to take the extra step to roast the strawberries for about 30 minutes in the oven. Roasting fruit can really help concentrate the flavors and almost caramelize the sugars, deepening their flavor profile.
After roasting, I place the strawberries into a small saucepan along with fresh lemon juice and sugar, cooking over medium low heat while stirring and crushing the strawberries a bit too. Once the mixture is bubbling and sugar has melted, place slightly cooled strawberries and all the juices into a blender and pulse a few times. Don’t completely puree it until smooth. We want some slight texture in the sauce left.
Place into a glass jar and let cool before storing in fridge.
Use sauce in anything you like. Keeps in fridge for 2-3 weeks.
INGREDIENTS
for roasted strawberry sauce (makes about 12oz of sauce)
1 lb fresh strawberries, hulled and sliced in half
Lemon juice of 1 medium lemon
2-4 tablespoons granulated sugar, depending on how sweet you like it
for matcha latte (makes one serving)
1-2 tsp matcha powder, depending on how strong you like it
6oz milk of choice (I love oat milk with matcha)
1-2 tsp vanilla syrup (optional)

Preheat oven to 350 degrees F. Spread out hulled and sliced strawberries onto a medium baking sheet. Drizzle half the lemon juice over it, followed by 1 tablespoon of sugar. Mix around a bit to combine, then bake for about 30 minutes, until strawberries have softened and darkened in color and released some juices.
Carefully remove from oven and scrape roasted strawberries and all the sticky juices into a small saucepan. Add the rest of the lemon juice and sugar. Cook over medium low heat for about 5 minutes until it bubbles, mixing and squashing the strawberries as you go along. Remove from heat.
Place slightly cooled strawberry mix into a blender and pulse a few times to blend it a bit. But keep some texture in it— not completely smooth. Pour into a glass jar or bowl and store in the fridge when cooled. When chilled, it is ready to use!
make strawberry matcha latte
Heat some water to about 175 degrees F. If you don’t have a temp control kettle, just boil water and then let it cool a good amount (water at boiling temps can ruin matcha taste). Sift 1-2 tsp matcha powder into a matcha bowl. Pour 40ml (just under 2oz or about 2.5 tablespoons) warm water into the bowl. Whisk the matcha with a matcha bamboo whisk or milk frother wand until matcha is dissolved and frothy.
To a drinking glass, add about 2-3 tablespoons of the roasted strawberry sauce to the bottom. Fill the glass with ice. Pour 6 oz of over it and optionally, add vanilla syrup. Top with matcha. Stir a little and enjoy!
